How can you tell when organic aloe vera gel (FROM THE PLANT) has gone off?

I took some of the gel from my new aloe vera plant, put it in a jar and stored it in my refrierator. Some parts of it initially turned brownish and then reddish but it doesnt look like its growing anything. It still has the gel like consistency and its still clear except the colour change. Has it gone off??
