Is there a difference in taste between ORGANIC BLUE AGAVE and ORGANIC RAW BLUE AGAVE?
Does one taste better than the other?
Is one better in qualities than the other?
There is a difference in taste, and a difference in what kinds of recipes you might use them in. The one marked raw is darker in color, and in flavor. It sort of resembles maple syrup in flavor. The one not marked as raw is lighter in color and flavor, and more closely resembles honey.
The raw one has a richer, more interesting flavor. I prefer it.
The one marked raw is probably not actually a raw product, by the standards raw foodists use. To make agave nectar, the plant is usually heated to temperatures over 105 Farenheit, destroying the enzymes that it had as a raw plant. However, it is cooked less than the one not marked as raw.
There are no laws dictating what can and can not be labeled as raw, so your definition and my definition and the definition used by the sweetener company may differ.
Many raw foodists will eat the one marked raw anyway. It is less refined than other sweeteners, and it is vegan. It is delicious, too!
