What makes a great coffee? Do you think it’s more about the bean – do you swear by the organic, trendy varieties or do the big, well known labels taste best to you?

I’ve been a Barista for a majority of my working life. I’ve pulled for tours of duty at Starbucks, worked at a Mom-n-Pop, and a trendy organic restaurant. I think your question points to the answer, a good Barista reads their customer and gives them what they want consistently.

If you’ll indulge me, I’d like to break all coffee drinkers into three categories: Relationshippers, Snobs, and Italians.

Relationshippers.
To these customers, the interaction with the Barista is why they return. For these customers, I will:

-Having no interest in sports, I will read the sports page daily, in order to have a common interest in my sport loving regular.
- When a woman has a Mrs. Robinson fantasy, I’ve been known to fulfill that fantasy by taking her on a platonic date.
- I once made espresso at a regular customer’s wake.

Snobs.
These folks want their drinks made to their precise specifications. They may know little to nothing about coffee, but I will remake their drink until they are happy. They want their espresso longo and “strong”, I’ll tamp the sh*t out of it and pull it as ordered. When they’re not happy with the results, I’ll add a shot and pull ‘em restretto. A good Barista never makes their customer feel dumb; I will read what you want and make it happen.

Italians.
It has been an honor and a privilege to serve these folks. They have an understanding of the Barista/Customer relationship. They lean up against the bar, spend 5 min. rapping with the Barista about some nuance of the human condition, then leave. They don’t want to have sex with you, they don’t want their egos massaged; just a well pulled shot, a little talk, then their gone.
