i’m making arm warmers and need help with the yarn sizes?

the pattern(below) describes the size as fingering which after a bit of googling i have found to be 2-5ply. what i was wondering was what difference does the ply make? i’ve compared 3ply and 8ply and they seem similar in size. can i use 8 ply instead of size 2-5ply? whats the largest size i could use? thanks.

Fingering weight is very thin. The ply is how many strands are twisted together and the final yarn depends on the number and thickness of each ply. You may find a small diameter 5-ply and a chunky 3-ply, but that is not the usual. The best thing is to look at the gauge of the item you are making, then choose a yarn closest to that by reading the information on the paper band. You can go up or down a needle size or two as well. Once you choose a yarn and needles, I would definitely make a swatch to make sure you are on gauge.
