What can one make with a LOT of scallions (green onions)?

I have a little stand at a farmers market where I sell sandwiches, soups, dips, spreads, etc. Basically fresh, organic prepared foods using local seasonal ingredients. Last week, one of the other vendors traded me a LOAD of scallions for some of my soups…Trouble is, I’m not sure what to do with them now. I’d hate to waste them. I thought of a scallion and sour cream spread, but I would prefer not to do that for certain reasons. I would really like to make a vegetarian sandwich that incorporates it some how…any ideas?

I grow my own scallions so I know how it feels to have a ton of them on hand! I chop them into almost every dish,salad and sauce I make! But one of my fave ways is too take a good sized bunch of them & toss with a touch of olive oil and pepper and then grill them right on the grill (make sure they’re going the opposite way of the grates! lol!) I do this till they start to brown a bit and then eat them just like that, as a side to most of my grilled dishes.
Do you ever make grilled veggie sandwiches? Great with scallions, red peppers, tomatoes, eggplant, portabella’s, etc, all roasted on the grill and piled on a toasted bun…drizzle the veggies with bit of olive oil and vinegar before serving – delicious!
