How do you determine what sort of chemical interactions are happening?

An ionic bond is a bond between a metal and a non-metal. A covalent bond is a bond between two non-metals. There is no such things as polar, non-polar, or van der waal bonds, rather they are intermolecular forces. A molecule is non-polar if the molecule does not have a large dipole moment. Conversely, a polar molecule is one that does contain a large dipole moment. H3C-CH3 does not contain a dipole moment. C=O does contain a dipole moment with the oxygen being partially negative and the carbon being partially positive.

So if you see a molecule that contains only carbon atoms it is non-polar. If you see a molecule that has a lot of oxygen atoms, especially C=O bonds, then it is becoming more polar. Additionally, any molecule that has a formal negative or positive charge it is automatically polar. Also, any molecule capable of hydrogen bonding is showing signs of being polar.

Van der waal forces are intermolecular forces between non-polar molecules, this is particularly true for long chains of carbon atoms such as polymers.

I feel like i did a bad job at explaining, but these concepts will become clear to you eventually. Try to focus on dipole moments, dipole moment have everything to do with polarity, and therefore everything to do with intermolecular forces.
