To vague in many ways- ask 100 people what is “green” and you will have 100 different answers. In fact the USDA definition of “organic” does not meet the criteria of organizations who have been around a lot longer than USDA labelling, such as http://www.tilth.org
The USDA http://www.usda.gov has some estimates on the “Organic” market- and it is big money, which is why companies like Monsanto want to dillute the meaning of the term so they can include their GMO crap.
As for which state- look at their size in population and you will be close enough for ranking them. California, and New York are your two most populous states inthe US, and your two largest markts. Each has their own department of agriculture, which should have their state’s Organic statistics.
